Single-dose grinders are loaded with one weighed dose at a time. Hopper grinders hold a supply of beans and grind on demand. Neither style is automatically better. The right one depends on how often you change coffees, how much you care about weighing beans in and grounds out, and how tall a grinder your counter can take.
The short answer
- Choose single dose if you switch beans often, want dose-in to match dose-out as closely as possible, or have low cabinets.
- Choose a hopper if you drink one coffee at a time and want to press a button (or set a timer) and walk away.

Retention: what is measured and what is claimed
"Retention" can mean total coffee left in the grinder, or the stale coffee that ends up in your next dose. Protocols vary, so compare numbers only when conditions match:
- CoffeeGeek measured up to about 2 g held in the Baratza Encore ESP on espresso doses when single dosing a hopper grinder (CoffeeGeek).
- Espresso Rabbit Hole reported typical retention of 0.1–0.3 g, inconsistent between uses, on the single-dose-capable Encore ESP Pro (review).
- CoffeeGeek measured 1–3 g on the original Fellow Opus (CoffeeGeek). Fellow claims "near-zero" retention for the redesigned Opus 2, which we have not seen measured.
- Turin claims under 0.1 g for the DF54; that is a manufacturer claim.
Being a single-dose design does not guarantee low retention; it has to be measured.

Recommendation
For most people setting up a first espresso corner, I'd start from the drinking pattern. If one bag of coffee lasts a week or two, a hopper grinder with a timer, like the Smart Grinder Pro or Specialita, is the easier daily routine. If you rotate coffees, pick a single-dose design and a 0.1 g scale.
