What the preheater does
Flair's support article says the controller has three levels matched to roast level. It says to preheat with the lever raised, the plunger at the top of the cylinder and the portafilter installed, to "lock in" heat (Flair support). The article describes heating the cylinder. It does not describe heating water, so plan on a kettle. Flair points to its safety guide for exact times.
